Adding ice water is to ensure that the flour does not overheat during the mixing process, thus damaging the gluten of the dough. Aging
After the flour is mixed and turned into small dough balls, it needs to go through a resting process on a disc, which is called maturation, to allow the dough to reach its perfect gluten development.

To ensure the safety and hygiene of the noodles, the company has specially built a drying yard to eliminate the risk of contamination from birds and insects, and to allow the noodles to fully absorb sunlight, preserving their wheat aroma, resulting in a chewy texture and excellent flavor.
