Dr. Noodles' original intention

In the summer of 2012, a group of us who love noodles wandered through the streets and alleys, trying to find noodles with a chewy texture, but we could never find the wheat-scented, chewy noodles that we were looking for. So we decided to work together to develop and create noodles that were full of wheat flavor and very chewy, and we hoped to share our dedication with our friends by making doctoral-level noodles. Thus, the origin of Noodle Doctor was completed with such a simple idea!

Our dedication to noodle development is akin to pursuing a doctoral degree—layer upon layer of meticulous care and effort. We bravely overcome weather and environmental challenges; any factor that might affect the taste and quality of our noodles is identified and addressed to ensure consistent quality. Our noodles use only the simplest ingredients: flour, water, and salt. We utilize the latest noodle-making machinery, meticulously handling every step from dough mixing, resting, rolling, shaping, and finally, noodle production. Furthermore, we have a custom-designed eight-step rolling technique—this is the secret to our delicious noodles!
